'Garash cake' is found in most Bulgarians restaurants and cafes. Bulgarians love to meet at 'sladkarnizi' – sweet-shops - where coffee is served with a large array of different cakes, ice creams as well as cocktails.
The 'Garash' is the cake for excellence. Many other cakes came after that - fruit, chocolate, almond, coconut, etc.. - but it remains one of the most popular desserts and also the right one for special occasions. Not all Cafés offer a version worthy of its fame. That's why it's better to learn how to prepare it at home, where you usually bake it on the occasion of birthdays, most often in winter as it a high-calories treat to indulge it and a small piece is enough to fill you up.
- 6 eggs
- 1 teaspoons vanilla
- 250 grams of butter
- 1 cup of powdered sugar
- 1 cup regular sugar
- 3 tablespoons of cocoa
- 2 tablespoons rum
- 1 tablespoon flour
- 2 cups chopped walnuts
Pre-heat oven to 180°C.
Blend together in a mixer until creamy: 6 egg yolks, vanilla, butter, a cup of powdered sugar, cocoa and rum. Put 2/3 or the batter aside.
Add to the remaining third a tablespoon of flour, 6 eggs whites, previously beaten until stiff, 1 cup of sugar, 2 cups of chopped walnuts. Blend well. Bake in a 10" round baking pan for about 10 minutes, until it becomes golden. Remove from oven and allow to cool.
After the cake has cooled well, cover with the cream set aside at the beginning and allow to set in the refridgerator. After a few hours, you can garnish it with chopped pistachios or walnuts (or both), chocolate sauce or confectionaer's sugar.
Most Bulgarians set the cake aside to enjoy after 24 hours.
