Georgian-style Beans with Plum Sauce

Georgian cuisine has a lot in common with Turkish, but it is also quite unique in many ways. The Georgian-style Beans might seem unusual at first, but the result is tasty.


1 cup small dried kidney beans

¼ teaspoon crushed hot red pepper

1 clove garlic, halved

½ teaspoon salt¼ teaspoon crushed hot red pepper

¼ teaspoon salt

2 teaspoons chopped fresh coriander

2 tablespoons red wine vinegar

1 clove garlic, minced

1/3 cup plum jam


Soak the beans overnight in ample water to cover. The next day, bring to a boil with 1 clove garlic, ¼ teaspoon of salt, ¼ teaspoon of red pepper, the bay leaf and 2 tablespoons of vinegar. Simmer until just tender, about 1 hour. Drain.

While the beans are still warm, stir in the remaining. Let stand at room temperature until cool. Refrigerate for several hours or overnight before serving. Add freshly ground black pepper to taste. Yield: 6 servings.
