The Moscow Almond Rings combine the fine flavours of Levant with the strong taste of Russia.
Ingredients 1 cup butter, 2 eggs yolks, lightly beaten, ½ cup sugar, 1 cup finely chopped almonds, 2small eggs, ¼ cup sugar, 2 cups flour
Preparation Cream the butter and ½ cup of sugar until light and fluffy. Beat in the eggs, then stir in the flour. Mix well. Form into a ball and refrigerate for 1 to 2 hours, until firm. Preheat the oven to 375 F. On a floured pastry board, roll out the dough to ½-inch thickness. Cut out rounds with a 4-inch cutter preferably a fluted one. Then take a 1-inch round cutter and cut a hole out of the center of each cookie. Transfer the cookies to a greased cookie sheet and brush with the lightly beaten eggs yolks, then sprinkle with a mixture of the chopped almonds and sugar. Bake for 12 to 15 minutes, until golden. Yield: 1 ½ dozen large cookies.
