A starter/hors-d’oeuvre of Latin America, especially of
3 ripe avocados
1 minced onion
3 chopped tomatoes
3 chopped boiler eggs
150 gr shredded boil chicken
3 tablespoons mayonaise
Salt and pepper
Juice of 1 lemon
Cut the avocados in two, take out the kernel, scoop up a little of the flesh around the hole and put it aside in another bowl. Sprinle some lemon juice over the avocados.
Add all other ingredients to the bowl and pour the rest of the lemon juice over them and blend gently.
Finally, fill in the hole of each half with the chicken stuffing.
Instead of chicken, you may use peeled shrimp and use coriander as a garnish, as well as any other colourful vegetable.
